Cornbread madeleines

Ingredients

1 cup Yellow cornmeal, browned in oven
½ cup Flour
1 teaspoon Baking powder
½ teaspoon Baking soda
¾ teaspoon Salt
4 tablespoons Sugar
1 cup Buttermilk
1 Egg, beaten
2 tablespoons Melted butter or margarine
1 medium Jalapeno pepper, seeded and chopped fine

Directions

In food processor, put ½ cup flour, baking powder, baking soda, salt, sugar and cooled cornmeal. Process until mixed, about 3-5 seconds. Add the buttermilk, egg and butter and process until smooth. Stir in the chopped pepper. Fill greased madeleine mould or tiny muffin tins ⅔ full of batter and bake for 15-20 minutes. Cool in pan, then remove.
