Cornbread madeleines

1 | cup | Yellow cornmeal, browned in oven |
½ | cup | Flour |
1 | teaspoon | Baking powder |
½ | teaspoon | Baking soda |
¾ | teaspoon | Salt |
4 | tablespoons | Sugar |
1 | cup | Buttermilk |
1 | Egg, beaten | |
2 | tablespoons | Melted butter or margarine |
1 | medium | Jalapeno pepper, seeded and chopped fine |
Directions
In food processor, put ½ cup flour, baking powder, baking soda, salt, sugar and cooled cornmeal. Process until mixed, about 3-5 seconds. Add the buttermilk, egg and butter and process until smooth. Stir in the chopped pepper. Fill greased madeleine mould or tiny muffin tins ⅔ full of batter and bake for 15-20 minutes. Cool in pan, then remove.
