Orange shortbread madeleines

Ingredients

Quantity Ingredient
1 cup Butter; softened
¾ cup Sifted powdered sugar
1 teaspoon Grated orange rind
1 teaspoon Orange extract
cup All-purpose flour
Vegetable cooking spray

Directions

Cream butter, gradually add sugar, beating at medium speed of an electric mixer until light and fluffy. Add orange rind and extract.

Stir in flour. (Dough will be stiff).

Press about 1-½ tablespoons dough into madeleine molds lightly sprayed with cooking spray. Bake at 325 degrees F for 20 minutes or until done. Invert onto wire racks to cool. Yield: 2-½ dozen.
