Mini madeleines

Ingredients

2 Eggs
cup Sugar
¼ teaspoon Salt
½ teaspoon Lemon extract
½ cup Sifted all-purpose flour
¼ cup Butter, melted and cooled

Directions

Preheat oven to 375 degrees F. Grease mini madeleine pan. In mixing bowl, beat eggs, sugar, salt and lemon extract at high speed until thickened (5 minutes). Fold in flour and cooled butter. Spoon into prepared pans. Bake 10 to 12 minutes or until lightly browned. Remove from pans, cool on rack.

Yield: 3 dozen.
