3 mediums Potatoes; cooked & mashed w/
Skim milk
ounce Neufchatel cheese
1 Egg; lightly beaten
2 tablespoons Onion; chopped
1 tablespoon Parsley; chopped
Paprika

Directions

Combine mashed potatoes and cheese, beating until well blended. Stir in egg, onion and parsley. Spoon into well-greased 1-quart casserole dish. Sprinkle with paprika.
