Fruit and seafood kabobs

18 | Fresh medium size shrimp | |
18 | Fresh medium size scallops | |
Boiling salted water to cover | ||
12 | Dried pitted prunes,stewed | |
12 | Dried pitted apricots,stewed | |
12 | Maraschino cherries | |
¼ | cup | Butter or margarine, melted |
(butter is best) |
Directions
Cook shrimp and scallops separately in salted water. Simmer about 5 minutes. Shrimp will turn pink and scallops will turn milky white.
Prunes and apricots should be cooked according to package directions but not so they fall apart. Drain cherries well.
Arrange on 6 skewers. Lay skewers on baking sheet with sides. Chill until needed. Brush with melted butter and heat in 425øF oven for about 5 to 10 minutes until piping hot. Serves 6 Typed in MMFormat by cjhartlin@...
