James barber's pepper pitas and hummus

Ingredients

14 | ounces | Chickpeas; canned, drained, rinsed |
3 | Cloves garlic; minced | |
4 | tablespoons | Peanut butter |
Juice of 1 lemon | ||
6 | tablespoons | Yogurt -Pepper Pitas--- |
8 | Pita bread | |
4 | tablespoons | Olive oil |
1 | pinch | Salt |
2 | tablespoons | Pepper |
2 | tablespoons | Parsley |
Directions
Combine all of the ingredients in a food processor and blend until smooth.
If too thick add a little water, lemon juice or yogurt. Makes 2 cups Pepper Pitas: Preheat oven to 400 degrees. Cut pitas into quarters. Brush with the oil and sprinkle with salt, pepper and parsley. Bake until crisp, about 5 mins. Makes 32 pitas
