Madrid red cabbage

2 pounds red cabbage
salt
¾ cup olive oil
3 cloves garlic, peeled
½ cup pine nuts
cup seedless raisins, soaked in water f; or 30 minutes
4 black peppercorns
1 clove
1 pinch ground cinnamon

Directions

Remove the outer leaves of the red cabbage and discard. Cut the cabbage into quarters, cut out the woody stem and chop the rest into thin strips.
