Meat and rice filling

Ingredients

Quantity Ingredient
½ pounds Lean ground beef/lamb
1 3/16 cup Rice washed and drained
1 each Tomato skinned and chopped
2 tablespoons Finely chopped parsley
Salt and black pepper
½ teaspoon Ground cinnamon or 1/4 teaspoon allspice or 1/2
teaspoon Dried basil/marjoram
1-2 tablespoon raisins/pine nuts optional

Directions

Put the lamb, rice, tomato, parsley, salt, pepper and cinnamon and raisins and/or pine nuts in a bowl and knead very well by hand until thoroughly blended. Fill vegetables no more than three-quarters full, to allow for the expansion of the rice. Use cooked rice if vegetables are to be baked.
