Meat and rice filling

1 3/16 | cup | Rice washed and drained |
1 | each | Tomato skinned and chopped |
2 | tablespoons | Finely chopped parsley |
Salt and black pepper | ||
½ | teaspoon | Ground cinnamon or 1/4 teaspoon allspice or 1/2 |
teaspoon | Dried basil/marjoram | |
1-2 tablespoon raisins/pine nuts optional |
Directions
Put the lamb, rice, tomato, parsley, salt, pepper and cinnamon and raisins and/or pine nuts in a bowl and knead very well by hand until thoroughly blended. Fill vegetables no more than three-quarters full, to allow for the expansion of the rice. Use cooked rice if vegetables are to be baked.
