Parsley buttered new potatoes

Ingredients

Quantity Ingredient
2 pounds Red potatoes, small, washed
Salt
Water
¼ pounds Butter
1 clove Garlic, minced
3 tablespoons Parsley, chopped

Directions

Peel a small strip around the middle of each potato. Boil potatoes in salted water until tender. Drain. Melt butter in a saucepan. Saute garlic briefly. Toss hot potatoes in butter and garlic; sprinkle generously with chopped parsley. Serve hot.
