Pork tenderloin w/ red chile mustard marinade - hb

Ingredients

Quantity Ingredient
3 To 4 lb pork tenderloin
2 cups Dijon mustard
3 tablespoons Ancho chile powder
1 tablespoon Honey
tablespoon Water
Salt & freshly ground black pepper to taste

Directions

FOR MARINADE

Combine all ingredients for marinade, mixing well and marinate pork overnight in the refrigerator covered. Remove pork from marinade, discarding marinade. Grill over medium-hot charcoal or wood, or broil for 15 to 20 minutes, turning occasionally. Slice pork into medallions and serve immediately Serves 6 to 8.
