Potatoes with cheddar cheese (microwave)

2 | pounds | Grated potatoes |
1¼ | cup | White wine |
1 | each | Red sweet pimiento |
2 | cups | Cheddar cheese; grated |
Directions
Melt the butter in a bowl in the microwave for 1 minute on High.
Season generously with salt and pepper.
Sprinkle salt and pepper in the base of a round dish 9 inches in diameter. Add the potatoes and pour the white wine over. Cover and microwave on high for 14 minutes.
Dice the sweet pimiento very finely. Mix the Cheddar cheese with the diced pimiento. Sprinkle on top of the potatoes and pour the melted butter over. Let the cheese melt for 2 to 3 minutes, then serve.
