Prunes in red wine

Ingredients

2 | cups | Dry red wine such as zinfandel |
2 | tablespoons | Honey |
6 | cups | Pitted dried prunes |
1 | Whole Vanilla bean |
Directions
Combine wine and honey in large saucepan. Bring to a boil over medium-high heat. Lower heat to medium. Add prunes; simmer, covered, 20 minutes. Spoon into heat-proof container. Add vanilla bean. Cover and refrigerate overnight. Reheat or serve chilled. Remove vanilla bean before serving.
Yield: 12 servings.
Comments: This is elegant served over vanilla ice cream.
