Skillet salmon patties

Ingredients

2 | Slightly beaten eggs | |
¾ | cup | Fine dry breadcrumbs |
⅓ | cup | Creamy cucumber salad dressing |
15½ | ounce | Red salmon, skin and bones removed, drained and flaked |
½ | cup | Chopped water chestnuts |
1 | tablespoon | Snipped dried chives |
2 | tablespoons | Cooking oil |
2 | tablespoons | Mayonnaise or salad dressing |
Directions
1. Combine eggs, ½ cup of bread crumbs, and 2 tablespoons of dressing.
Add salmon, water chestnuts, and chives. Mix well. On waxed paper, shape the salmon mixture into four ¾-inch thick patties. Coat the patties with the remaining bread crumbs. 2.In a 12-inch skillet, cook patties in hot oil over medium heat about 6 minutes or until golden, carefully turning once.
3. Meanwhile, combine remaining dressing and mayonnaise. Dollop each patty with some of the dressing mixture.
