Skillet salmon patties

Ingredients

Quantity Ingredient
2 Slightly beaten eggs
¾ cup Fine dry breadcrumbs
cup Creamy cucumber salad dressing
15½ ounce Red salmon, skin and bones removed, drained and flaked
½ cup Chopped water chestnuts
1 tablespoon Snipped dried chives
2 tablespoons Cooking oil
2 tablespoons Mayonnaise or salad dressing

Directions

1. Combine eggs, ½ cup of bread crumbs, and 2 tablespoons of dressing.

Add salmon, water chestnuts, and chives. Mix well. On waxed paper, shape the salmon mixture into four ¾-inch thick patties. Coat the patties with the remaining bread crumbs. 2.In a 12-inch skillet, cook patties in hot oil over medium heat about 6 minutes or until golden, carefully turning once.

3. Meanwhile, combine remaining dressing and mayonnaise. Dollop each patty with some of the dressing mixture.
