Trinidad mango salsa

1 | each | Ripe mango or papaya |
1 | each | Red chili, minced |
1 | each | Garlic clove, minced |
Salt & pepper | ||
Juice of 1 lime |
Directions
Peel the mango or the papaya & discard the stone or seeds. Chop the fruit. Combine the fruit with the remaining ingredients.
Spoon the salsa into a jar, cover tightly & refrigerate. It will keep a month. Use as a condiment to vegetables or serve with chips.
