Turkey-apple hash

Ingredients

Quantity Ingredient
2 teaspoons Olive oil
1 cup Chopped onion
10 ounces Skinless boneless turkey breast; cubed
2 smalls Macintosh apples; cubed
8 ounces Baked potato; cubed
2 tablespoons Apple Cider; Or Apple Juice
½ teaspoon Crushed fennel seeds; optional
Freshly ground black pepper; to taste

Directions

Place large nonstick saucepan over medium-high heat 30 seconds. Add oil; heat 30 seconds more. Add onion and cook, stirring constantly, until soft, 5-6 minutes. Stir in turkey and continue cooking until browned on all sides.

Stir in apples, potato, cider and fennel seeds ( if using); partially cover and cook, stirring occasionally, until apples are soft and turkey is cooked through, about 5 minutes. Sprinkle with pepper.

Serving (about ¾ cup) provides: ½ fat, ½ fruit, ½ veg, 2 pro, ½ bread, 4 cal.
