Malcolm's red cabbage

Ingredients

Quantity Ingredient
1 small Onion; chopped
2 tablespoons Oil
½ large Cooking apple; chopped
1 slice Streaky bacon; chopped
½ large Red cabbage; coarse shredded
15 fluid ounce Beef stock
3 tablespoons Vinegar
2 Cloves
1 pinch Caraway seed
Salt & pepper

Directions

In a large casserole, fry onion in butter/oil till soft. Add bacon and apple and fry a couple of minutes more. Stir in cabbage and then add enough beef stock almost to cover cabbage. Now add vinegar and seasonings, grinding the caraway lightly, if you don't much like the flavour, and stir together again. Bring to boil, cover tightly and put into pre-heated 325F Mk 3 oven for several hours, until really tender.
