Tuna fish sauce with bow ties

Ingredients

Quantity Ingredient
4 tablespoons Olive oil
2 Garlic cloves, crushed
3 Anchovy fillets
1 can Tuna with oil
8 Fresh plum tomatoes, chopped
2 tablespoons Mint leaves, chopped
½ pounds Bow ties, pasta
Salt/pepper

Directions

Saute garlic, salt, and pepper to a pale color. Add anchovies, crush with a wooden spoon. Add tuna with oil. Break into flakes, stir and saute 2-3 minutes. Add tomatoes and mint leaves. Simmer for 15 minutes covered.

Uncover and simmer 5 minutes longer. Serve over bow ties cooked al dente.
