Leftover potato patties

Ingredients

Quantity Ingredient
1 cup Mashed potatoes
1 cup Uncooked zucchini
1 Egg yolk
2 Cloves garlic
2 tablespoons Chopped pimento
Salt & freshly ground black pepper
¼ teaspoon Grated nutmeg
2 tablespoons Vegetable oil

Directions

Mix together potatoes, zucchini, egg yolk, garlic, pimentos, salt & pepper & nutmeg. Heat oil in large skillet until hot. Form mixture into patties.

Place patties in hot oil. Fry patties until nicely browned on both sides.

Lower heat & cook a few minutes longer until heated through.

Approximately 5-8 minutes.
